Judges Comments:

Beautiful amber coloured honey, with a silky smooth texture. Initially, you experience a flood of sweetness and for a couple of moments question whether there is any depth of flavour, but then the lingering aromatic, almost floral aftertaste is really pretty. 

This is lovely light chestnut coloured honey with a markedly fluid texture. On the nose, it’s almost animal – malty but also somewhat farmyard. On the palate, there are similar malty, cereal notes, but also an uplifting acidity on the finish that is almost citrussy. This honey will not be to everyone’s taste and those looking for straightforward teatime sweetness might find it challenging, but it is unusual, surprising and, to our tastebuds, delicious
